How to make Carob cream cake inspired by Leah Chase – Family Meal by Winosity

This cake is a delight. It’s based on a recipe by the “Queen of Creole Cuisine,” Leah Chase. We did a whole episode of Family Meal about her. You should check it out.

Her version of this recipe used Bailey’s Irish Cream. But, this recipe uses a carob cream that’s a bit richer. We like to cook from scratch here.

You can use this cake in layers. A lovely whipped cream or tart jam would be nice between the layers. Or, you can just top it with cream and enjoy.

Wine Pairing with Carob Cream Cake

We paired this cake with a sweet red wine. This wine was made by the first US winemaker to produce a sparkling Suavignon Blanc. That made me keen to try it.

This wine is mostly Zinfandel and has a rich dark berry flavor. That’s flavors like stewed blackberry or blueberry. There are also a few sour notes in this wine to help cut through the sweetness.
