It’s amazing how exciting fresh herb bread can be. And you can enjoy it at home. Use this spiced bread recipe as a bonding moment with your friends and family. It uses a spice blend that’s similar to Zaatar, a Middle-eastern spice blend.

You can store the rested dough in the freezer for 3 weeks.  Just make sure that it is wrapped well in cling film. Ground cumin would be an awesome addition to the Zaatar spice blend. It will give the pita bread a warm and earthy flavor — which is in keeping with the Middle Eastern inspiration of this recipe.

Westerners are accustomed to using butter in bread recipes. However, in the Middle East, oil-based dough is more typical. It will result in a light, crispy on the outside, but chewy on the inside, loaf of bread.

You can use a store-bought zaatar spice mix, but making your spice mix is interesting and will give you more satisfaction. The spice mix can be heated in a skillet on low heat. This will release the natural oils and flavors that will enhance the final product.
