Guilt-free Stir-Fried Soba Noodles
Ingredients
- 1 lb Soba Noodles
- 2 tbsp Low sodium soy sauce
- 1 tbsp sesame Oil
- 1 tsp Brown Sugar
- 1 tsp black sesame seeds
- 1 tbsp vegetable oil
- 14 oz firm tofu
- 1 cup cabbage
- 1 clove garlic
- 14 oz chicken breast
- Salt and Pepper to taste
- 3 oz Carrots
Instructions
- In a large pot of boiling water, cook the noodles according to the instructions on the package. Drain and rinse with cold water, set aside
- Mince the garlic.
- Shred the cabbage
- Julienne the carrots
- Chop the tofu into rectangular strips
- Cut the chicken breast into bite-sized pieces
- Heat oil in a wok and saute garlic until fragrant.
- Add the chicken and saute for 2 minutes.
- Add the tofu, mix well and saute for another minute.
- Add the carrots and cabbage and saute for another 2 minutes.
- Add the soba noodles and crank up the heat and saute for 2 minutes.
- In a small bowl, mix the soy sauce, sesame oil, and brown sugar.
- Add the sauce and saute the mixture for 1 minute until fully incorporated.
- Top with black sesame seeds.
