If you’re using freshly made kimchi, make sure it is at 2 weeks old. If not, add 1/2 teaspoon of rice vinegar to the kimchi juice to make it sour. Getting 1/4 cup of kimchi juice can be a hassle if your kimchi is fairly young. You may use 2 tablespoons of kimchi juice and a teaspoon of Korean chili paste instead. Adding a teaspoon of oyster sauce to the fried rice will enhance the umami flavor of the dish. Dried shiitake mushrooms would also be a perfect addition. Just make sure to soak the shiitake mushrooms in boiling water for 15-20 minutes.

Broccoli, cauliflower, spinach, and carrots are great in this dish too. If you’re low-carb, you may also use cauliflower rice instead of regular rice.
