Light & Crisp Cucumber Cocktail

- 7 ounces cucumber
- 1 bottle light white wine
- 1/4 cup simple syrup
- 1/4 cup mint Leaves
- Ice cubes
- 1/2 tsp salt
- Cut the cucumber into chunks.
- Transfer to a food processor and add mint leaves.
- Blend until smooth.
- Strain the liquid through a fine mesh.
- In a large pitcher, mix all other ingredients and blend in cucumber-mint mixture.
