Ingredients
- 2 lbs chicken breasts
- 9 oz Provolone cheese
- 1 cup sour cream
- 8 oz canned diced green chilies
- 2 oz red bell pepper
- 3 oz whole corn kernels
- 2 oz cherry tomatoes
- 1 tsp Salt
- 1 tsp ground black pepper
- 2 tbsp butter
- 2 tbsp vegetable oil
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Prepare a 9x13 casserole dish and brush some butter.
- Cut chicken breasts into bite-size pieces, season with salt and pepper.
- Heat oil in a large skillet and add the chicken. Cook for 3 minutes until cooked through.
- Arrange sautéed chicken in a casserole dish.
- In a separate bowl, mix cheese, sour cream, and canned diced green chilies (with juice).
- Add chopped red bell pepper and corn to the casserole dish.
- Add the cheese mixture.
- Baked in the oven for 15 minutes.
- Serve with diced tomatoes.
