Quinoa is gluten-free and high in protein, and one of the few plant foods that contain sufficient amounts of all nine essential amino acids. Quinoa has a natural coating called saponin. This natural coating can make the cooked grain taste bitter or soapy. It’s easy to get rid of by rinsing the quinoa just before cooking. Other cookbooks suggest soaking it overnight to remove the bitterness.
One cup of quinoa will cook in about 20 minutes. You may add spinach and broccolini, 5 minutes before serving the one-pot meal. These will add a great flavor profile to this Mexican quinoa recipe.
