Smoky Crab Soup

Recipe Notes

If you want a more savory broth, add a bit of kombu, dried shrimp and bonito to the broth. I actually start my broth the night before in a crock pot. I add in a few crab shells or fish bones and let it cook overnight. It’s not that hard to do and add a ton of flavor to the dish.

Wine Pairing

White wine is typical with fish and seafood. But, there’s a lot of smoke and pepper flavor in this dish because of the smoked paprika. I think that makes it heavy enough to stand up to a red wine.

Chianti and peppers are a classic food and wine pairing. So, that’s what I paired with this soup. And, it was great. Check it out below.

Winemaker Notes
Brilliant ruby red in color, on the nose this wine offers scents of red fruits, plums, and violets. Also evident are notes of blond tobacco, graphite, damp underbrush, and toasty notes. On the palate, it is pleasantly refreshing, with elegant and balanced tannins that leave a long finish of toasted and bitter cacao notes, which come from aging in wood.
