Zesty Orange Buttermilk Pancakes

Ingredients
- 3/4 cup orange juice
- 3 tbsp grated orange zest
- 3/4 cup buttermilk
- 3 large eggs
- 2 cups almond flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp raw honey
- 5 tbsp melted butter
- 1 tbsp vegetable oil
Instructions
- In a bowl, whisk the orange juice with the grated zest, buttermilk, and eggs until smooth and fully incorporated.
- In another bowl, combine the dry ingredients.
- Slowly add the wet ingredients to the dry ingredients until fully blended.
- Heat a skillet over medium heat.
- Add the oil to the heated skillet, pour about 1/4 cup of batter into the pan for each pancake.
- Flip the pancakes when you see bubbles.
- Adjust the heat to prevent burning.
- Serve hot with some maple syrup and blueberries.
